At Akumal Beach for the Last Week – back to rain :-(

Akumal Beach ResortFor the last week we were enjoying Spring Break at the Akumal Beach Resort. The resort is all-inclusive and located Mexican Riveria. Basically, just over an hour south of Cancun. It’s not a large or a high-end resort, but it is a nice resort with a great atmosphere and good food. If you are looking for a large resort with lots of activities and a variety of restaurants, this probably isn’t the place for you. We found it to be a nice size with a short walk to the beach, pool and dining room. I think it has about 240 rooms.

Now the bad news…we are now back home with no open bar, pool or unlimited ice cream and all of the other amenities that go with an all inclusive resort. So to make the best of it, I picked up a frozen wild Sockeye salmon fillet and filled up the propane BBQ tank. I usually BBQ all year round but for the last few months I haven’t been motivated to fill the proprane tank. I’m happy I finally got it filled and I officially kicked off BBQ season with BBQ salmon, herbed potatoes cooked in foil and steamed asparagus with sprinkling of balsamic vinegar and salad for dinner.

Just before I fired up the BBQ there was a down pour of rain which wasn’t very encouraging, but the clouds left in a few minutes and the sun came out.

While in Mexico I did have a chance to check out a few palapa tiki huts and I came away with some great pictures and ideas on building and decorating tiki huts. So stay tuned for some future articles with some great information.
